Executive Chef Eugene Robinson Hill City House Grille’s Executive Chef Eugene Robinson’s love for the culinary field began at an early age … he was cooking with his grandmother at the age of 10.  His grandmother was a full-blooded Italian who loved to cook and with much flavor using fresh herbs and local produce.  Eugene was hooked on a dish his grandmother prepared using sausage, meatballs and homemade linguini.  So, what was the Eugene’s first dish he prepared on his own; excluding kid’s dishes, it was Blackened Tilapia with Rosemary Tomato Sauce … quite an endeavor for such a young man!  As Eugene grew up, his interest in the culinary field grew and he attended Johnson & Wales.   Eugene’s passion is shown through his food.  Eugene now has children of his own and all of them have a passion for creating in the kitchen.  Who knows, maybe there will be another Chef in the family someday!  Eugene has held positions including Executive Chef, Roundtable Chef and Sous Chef at the Hilton, Carrabbas, and other facilities.  As the Executive Chef at the Hill City House Grille, Eugene delivers consistency in his food whether it be local cuisine or metropolitan specials.  He strives for dining to be an experience, not just a meal, in the dining room, the bar or in our banquet facility.  Eugene pays particular attention to seasonal influences and is able to create unique and flavorful dishes that will appeal to Lynchburg natives, as well as those not from the Lynchburg area. “I want people to enjoy my food, the atmosphere and to feel as if they are at home.  I see myself as a southern chef with the ability to add a twist.”  (Eugene Robinson)  Stop by the Hill City House Grille to have a great dining experience … you will probably see Chef Eugene roaming around the dining room and bar when he is not at the helm of the kitchen.  Looking forward to seeing you!

Eugene Santiago became the executive chef of Carson Kitchen back in June, just as the restaurant from rock ‘n’ roll chef Kerry Simon and partner Cory Harwell celebrated its first anniversary. Before joining the Carson Kitchen team as sous chef, the Los Angeles native received his degree from Le Cordon Bleu in Pasadena, Calif., in 2005. He’s worked at James Republic in Long Beach, Calif., Elf Café in Los Angeles and Mar’sel at Terranea Resort in the Los Angeles area. Santiago also worked with Simon for three years at Simon LA and at Simon Kitchen & Bar for one year. Here he shares three of his favorite places to dine in Las Vegas. Which restaurants do you turn to when you’re not working? Jinya Ramen Bar, Other Mama and Makers & Finders.What dishes are most memorable?At Jinya Ramen Bar, I love the crispy shrimp balls and tonkotsu spicy, pork chashu, spicy bean sprouts, kikurage and green onions served with thick noodles.Other Mama has awesome fresh oysters. I also love the grilled prime ribeye with miso hollandaise and the spicy yuzu chicken wings.Makers & Finders, a great coffee bar, has the best lavender latte and breakfast croissant sandwich with scrambled eggs, cheddar and maple bacon. Also a huge fan of the chorizo Brussels sprouts made with three grilled shrimp, crispy onions and chorizo.Why do you enjoy going there?Jinya is open late and great place to enjoy a comforting bowl of noodles after a long day in the kitchen. Other Mama is an awesome space with counter seating to an open kitchen. The staff is down to earth and makes the guest feel right at home. The menu is progressive and inventive and full of comforting food.Makers & Finders has the best coffee in downtown. It offers an awesome menu full of Latin-American flavors.
